Mama cows, a bull, the sun, the rain, soil, rotational grazing, haymaking, planning, butchering and packaging have come together – after 26 months of pasture living – into an extraordinary food – Farmcraft 100% Grass Beef - rich, tender red meat and melty, nutrient packed and delicious marbled fat.
We are so pleased and grateful that the universe came together for us to have the honor of offering the community this wholesome, delicious and nourishing food.
The cattle are hard at work every day converting an array of pasture vegetation into meat, bone, hide, organ and fat. This last summer they cut every square foot of pasture vegetation across our farm 3 to 4 times from April through November, happily bending their neck down, wrapping their tongues around a bouquet of the sward, and tearing off a bite, again and again and again, a few inches at a time, to eventually cover over 40 acres of grazing. Between bouts of grazing, usually totaling about 8 hours a day, they stand or lie and contentedly ruminate, chewing their cud, swallowing a second time and digesting the symphony of energies and nutrients provided by the pasture. Over the course of a 26-month life of a beef, in addition to Mama’s milk, I figure each beef eats about 26,000 lb of fresh pasture plants and about 5,000 lb of hay. That’s 26,000 lb of green, diverse, rooted, living pasture plants, and 5,000 lb of the same but stored as dry hay, assimilated into a beef’s body and finally distilled into roughly 350 lb of take-home edible meat and fat. That’s a serious concentration of nutrients.
I don’t know if a person eats 26,000 lb of fresh greens over the course of even a 100 year life. A beef does it in less than 2-1/2 years. And then that accumulation, the incredible bio-concentration of vegetable nutrients, a beautiful and wondrous alchemy of sun, soil & bovine, is available to us as nourishing meat, bone & fat.
