About Farmcraft Pork:

Farmcraft Pork is flat out delicious, wholesome goodness. The taste of Farmcraft pork reflects the entire journey of the animal, from birth to plate. Every detail of its life— birth outdoors on organic pasture, nurturing care from its mother, diverse pastures and meadows to roam and forage, weekly moves to fresh and clean pastures, nutritionally diverse organic feed to enjoy, copious sunshine and fresh air, a complete abstinence from all pharmaceuticals and vaccinations, plenty of space for rest yet plenty of herd mates for social interaction, gentle handling and humane processing—all contribute to the exceptional flavor of Farmcraft pork. This is pork as it is meant to be, with generous marbling of sweet, tender fat and rich red meat that bursts with flavor and nutrients.

Organic-fed is exceedingly rare for pork. It's expensive to feed pigs organically, but it's the only way that we find acceptable. Our pigs live outdoors exclusively, year round, and they naturally thrive with zero vaccinations, antibiotics or other pharmaceuticals, and no agricultural chemicals like pesticides or herbicides. Instead of chemicals and pharmaceuticals, we use pasture rotation. Every week during the 8 months of summery weather, the pigs are moved to a fresh and clean pasture of living green vegetation. The clean environment and the minerals and vitamins of fresh living forage keep them vitally healthy and make for nutritionally packed pork. During the 4 months of wintery weather, the pigs have wide-open 24/7 access to both a dry straw-bedded hoop house and to a winter pasture paddock to continue to dig, forage and sunbathe through the winter months. During the winter, the pigs are also fed the previous summer’s high quality clover and alfalfa hay. This keeps up their forage intake and provides a stored source of pasture vitamins and minerals. In addition to pasture forage and hay, we provide a mix of fresh milled certified organic grains and minerals - generally organic corn, organic whole ground soybeans, organic wheat, redmond salt, calcium carbonate, sea kelp. Our geography is well suited to produce these organic grains, and the combination of the feed and pasture provides robust good health to the pigs and produces a delicious and nourishing pork.

It requires significant labor to keep sows and boars, to provide an environment for mama pig to raise her piglets, and to move the pigs through the fresh pastures each week. But it is a worthwhile labor to take care of our beautiful pigs and to produce a truly exceptional and unique product. Farmcraft pork is as wholesome and ethical as anything in the world, and chock full of vital energy, nutrients and savory flavor.

Buying a Half or Whole Pig:

$100 deposit for half pigs, $200 deposit for whole pigs. The final price will be $4.99 / lb hanging weight paid to Farmcraft (minus deposit), with processing fees paid to Beck's Meats in Oshkosh. We target a hanging weight of approximately 140 – 175 lb.

We choose to work with Beck's meats for their excellent communication and customer service, quality packaging (vacuum or paper wrapped), low-stress pig handling and slaughter, and tasty value-added products. MSG-Free and Nitrate free options are available for bacon, hams, brats, etc.. Vacuum or paper wrap packaging is available.

-       Reserve your half or whole pig with a deposit now.

-       You will receive a confirmation from Farmcraft confirming your half/whole pig and the date.

-       Up to 2 weeks before the date, Beck's meats will walk you through your cutting and packaging selections – for example, vacuum vs paper wrap, number of pork chops per pack, bacon vs fresh belly, any sausage links or ground sausage you would like made.

-       Pickup: You pickup your whole or half pig from Beck's 2-3 weeks after your butcher date. You pay Beck's for the butcher fee. 

Butcher fees range from $100 - $175 to for a half pig and $200 - $350 for a whole pig, depending on your smoking and sausage making choices and on your selection of vacuum vs paper wrapped packaging. In addition to the meat, you may choose (and we encourage you!) to take home pork bones, organs like heart and liver, and the wholesome and delicious pork fat trimmings. We also encourage you to ask for a generous “fat cap” to be left on all of your pork chops and roasts. It is your preference, but for our family we like to have a fat cap of 3/4" left on our cuts.

A half pig needs about 3 cubic feet of freezer space, a whole pig about 7 cubic feet. At our target hanging weight of approximately 140 - 175 lb, expect a take home weight of about 50 - 65 lb for a half pig and 105 - 130 lb for a whole pig.

Hypothetical Half Pig Example:

Live Weight = 215 lb.

Hanging Weight = 155 lb. Half Pig Hanging Weight = 77.5 lb.

Half pig deposit paid now = $100.

Farmcraft invoice paid after butcher date = 77.5 lb * $4.99 / lb - $100 deposit = $286.

Butcher fees paid on pickup 2-3 weeks after butcher date = $130.

Take Home Weight Half Pig = 57 lb.

The photo on this page is an example of a the “take home” of a half pig, including bacon, ham, ham steaks, ground sausage, shoulder roasts, rendered lard (note that Beck's will provide the lard as “fresh”, not rendered), rib roasts (or you could get pork chops, or a combination of rib roasts and pork chops), spare ribs, smoked shanks and sausage links.
